How to make Pepper Steak with Caribbean Rice n Peas

Pepper steak is a simple dish that tastes amazing, especially when teamed with Caribbean RicenPeas, which is healthy and wholesome. I try and use a great cut of Sirloin steak as it is tender and flavourful when cooked.
My family love that I add hot peppers to give a bit of a kick, however you can always make it without the hot spicy peppers !!


Peppersteak 

Marinate Steak overnight                                   
Medium sized thin cut Sirloin steaks
Olive oil or seasoned oil,
2 cloves of diced garlic
1 teaspoon curry powder
1/2 teaspoon black pepper
1/2 teaspoon pepper sauce or 1 scotch bonnet pepper
Small piece cubed pumpkin 
Small piece fresh ginger 
2/3 sprigs of thyme 
2 tablespoon light soy sauce 
6 small cherry tomatoes

Heat 1 tablespoon seasoned oil, cut your steak into strips, saute beef in the pan, add curry powder, flash fry until meat is browned on both sides, simmer in 5/6 tablespoons of water and a vegetable stock cube.( you will have to judge this take a look at the photograph below)

Add the pumpkin and leave to simmer, adding your light soy sauce and pepper sauce and tomatoes. Simmer for 10 -15 mins then place in a oven dish on medium heat 200 in the oven for around 20 minutes, I usually take it out and check the tenderness of the steak and may add a teaspoon water if needed. Do not let the meat dry out, keep the steak moist by stirring  regularly and finely mashing the pumpkin, to give more flavour and it also creates a delicious gravy.




Cooking both at once 

Rice and Peas
Kidney beans soaked over night 24 hours (cover beans so they soak up all the water)
Seasonings fresh garlic 1 sprig fresh thyme, and 1 piece of ginger, dash of black pepper and teaspoon pepper sauce. Easy Cook Long grain Rice. 

Add cold water to the pressure cooker, include all the beans with the dark water from the overnight soak, this is what gives the beans the flavour. Bring the water to the boil, add pinch of salt and black pepper to taste and include your vegetable stock cube. Turn down the heat and let it cook slowly for minimum 30 minutes, keep checking the water levels and softness of the kidney bean. Cook until you can squeeze the bean between your fingers and its a soft mush. 

You then add 2/3 cups of washed rice to the beans, I add a dash of pepper sauce and a knob of butter..
Place on a low fire and the rice will soak up the water, I always turn my rice with the peas to ensure even distribution. Cover with plate or lid on really low fire and allow the rice to slowly allow the steam to cook the rice. 



Seasoned oil 


Serve your pepper steak on a bed of rice and peas with a crisp salad, or homemade coleslaw, I also added fresh spinach leaves. 

I this is my pepper steak recipe, I'm not great at measurements but there are lots of professional cooks on YouTube for the basics and everyone will make it in different ways .. Make it to your own taste.
